Originally concocted by our friend Steph, and served at one of the numerous dinner parties hosted by our friend Lisa.
– one head cauliflower (about 3#), cut
-2 Tbsp. butter
-2 Tbsp. flour
-1 cup milk
-1 cup creme fraiche
-2 oz. goat cheese
-2 Tbsp. fresh chives, chopped
-salt and pepper
-pinch of cayenne
*preheat oven to 350 and butter a 12-inch gratin or shallow baking dish.
*Bring cauliflower to a boil and simmer 10 minutes until tender, drain.
*Melt butter, whisk in flour, stir till it forms a paste.
*Gradually add milk till smooth and cook over low heat until thick.
*Stir in chives, goat cheese, creme fresh, s/p and cayenne.
*Arrange cauliflower and cover with sauce.
*Bake until golden and bubbling, about 40 minutes.
