This recipe is a staple in our home and though we didn’t do turkey this year, I thought some of you might have some of it in the freezer. Try it out, your taste buds will be delighted.
You will have enough to freeze. You need to chop a few things, but nothing else beyond putting it in the pot and turning on the heat required.
- ::INGREDIENTS::
1 roasted chicken/turkey from your favorite store or home, shredded
1 jar Mrs. Renfro’s green salsa (Safeway or Fred Myer carries it here) or Jalapeno salsa substitute.
1 28-oz can chopped tomatoes (roasted are nice)
1 quart chicken broth
1 deli style fresh salsa (you know the chunky uncooked kind), or whatever you have in the cupboard.
2 Tbsp. ground cumin
1 can chopped green chiles
2 or more carrots, sliced in moons
2 or more stalks celery, chopped
1 or more colorful peppers, chopped
1 cup corn, I use frozen
1 small onion, chopped (this can be omitted if salsa has lots of onions)
2 cans rinsed white beans or pinto
*Put it all in a pot and cook on medium until carrots are tender.
*Serve with chips, sour cream, avocado, chopped cilantro, or cheese…of course in my house you also have a refreshing beer.
Wow! That’s such an inviting photo, it could be on the cover of a food magazine. Yum!!! Can’t wait to try your recipe. Thanks for sharing it with us.

Oh my, this looks right up my alley. We LOVE soups and stews in the autumn and winter seasons.
Thank you so much for sharing this!
This looks really tasty and I’m always game for a new soup recipe. I love your pot too.
this looks wonderful (i love mrs renfro’s salsa!) i haven’t run since i lost my shoes. i have been hiking every day with bruno, but haven’t run a step. i keep thinking the shoes will turn up.
I just made this for dinner tonight and the whole family loved it! Thanks for sharing and spicing up our turkey leftovers.
Dang does this look good. Quick question – for the deli style fresh salsa – is that one cup, or one jar?
Just put in the whole jar or tub, you can’t go wrong.
It looks like you put some beans in there too. If so, what kind? Yum!
White beans, added it!
